Dating back to around the year 1850, pide originates from the Turkish town of Bafra. Local bakers filled their dough with various combinations of meat, vegetables and herbs before baking, creating the Içli pide. Some consider this the predecessor to today’s pizza due to its oval shape. The dough ingredients are very similar to pizza dough: flour, yeast, water, oil, sugar or salt. Some pide makers add a dairy product to the dough, such as milk or yogurt. This is not something we do at Euro Pizza Products because it would be an undesired allergen for some.
Pide is first rolled into an oval shape and then covered with the topping of choice. The challenge is to roll out the dough as thinly as possible. Baking the pide quickly but at a high temperature – preferably in a brick oven – gives it a wonderfully crispy exterior!
