Our dough consists of six ingredients that each have their own function and thus create the perfect pizza together: water, flour, salt, sugar, yeast and oil. In this edition, we would like to tell you more about one of our ingredients: Water.
The hardness of the water determines the quality of the pizza dough. The filtered water that we use has the correct pH value, which produces an optimal result. This has a greater impact than you would think: when the value is too low, the dough becomes weak, and a higher value slows down the fermentation process.
